Alli’s Chickpea and Spinach Salad
Most of my meals consist of fruits and veggies, except for my birthday week when I ate nothing but potatoes, pasta, and cake. Starting this week I’m getting back to my routine of working out twice a day and eating super healthy. If you’re trying to eat healthier and include more greens in your diet I highly recommend this salad.
The first rule to eating healthy and changing your habits, is to eat things you actually like! I can eat this salad every day. It’s simple to make and includes everything I love.
Salad Ingredients (1 serving)
- 2 cups fresh spinach
- 1-2 Roma tomatoes (quartered or diced)
- 1/2 red onion (less or more)
- 1 avocado (peeled, pitted, diced)
- 1/2 cup chickpeas/ garbanzo beans
Dressing Ingredients
- 2-4 tablespoons of extra virgin olive oil, or to taste
- 1/2 juiced lemon, or to taste
- 1/4 – 1 teaspoon sea salt and black pepper, or to taste
- 1/2 teaspoon of garlic powder, or to taste
- 1/4 teaspoon oregano (optional)
- 1/4 teaspoon cayenne pepper (optional)
Throw everything in a bowl and mix with your hands or tongs!
