Broccoli – Any Way, Any Time

I was never the kid who wouldn’t eat my vegetables. I absolutely love vegetables and I can’t think of one I don’t like. I’m not a meat eater so most of my meals consist of vegetables and I’m always looking for ways to spice things up. I do not identify as a vegan, vegetarian, nor a pescatarian. I simply eat what’s good for MY body. My favorite vegetable is broccoli. I enjoy it roasted, steamed, fried, or raw. I can eat it for breakfast, lunch, or dinner! I often hear people say they can’t give up meat because their options are limited when it comes to fruits and vegetables, they don’t know what or how to prepare them, or it’s too expensive. I realize cost is relative especially if you have a family to feed. Trust me, I don’t spend an arm and a leg on groceries! And don’t feel pressured to buy everything organic. I do suggest that you buy raw vegetables but most unseasoned, unprepared, frozen vegetables are just as healthy. Two grocery stores that never let me down are Food Lion and Sprouts. Lately I’ve been steaming my broccoli. Here’s what I do.

Step 1: Wash and cut raw broccoli crowns. You can also buy bagged broccoli already cut.

Step 2: Steam broccoli in steamer or in a pot/pan on the stove. If using the stove method, use about 1/4 cup of water. Using too much water will boil your broccoli instead of steaming. Optional: add sea salt to water.

Step 3: Remove broccoli from steamer. Place in a bowl and add butter and seasoning. I use vegan and soy free earth balance.

Step 4: Season well! I love this combination. I found this Paleo Powder seasoning at Harris Teeter. Paleo Powder Herbed is salt free and tastes great, but if you want a little salt add sea salt or Paleo Powder Pink. You won’t be disappointed. Mix all ingredients and eat!
