This is Allison’s Bean Salad

This is probably one of my favorite recipes! It is healthy, hearty, filling, fresh, and there is no cooking required! Fix in minutes and save in the fridge for days!

  • 1 – 15 oz can organic black beans
  • 1 – 15oz can organic cannellini beans
  • 1 cup cherry tomatoes, sliced
  • 1 tbsp red onion (I love onion and chop 1/2 of a whole onion)
  • 1 – 2 ears of fresh corn (slice or shave the fresh kernals off the cobb)
  • 1 green bell pepper, chopped
  • 1 red bell pepper chopped
  • 1/4 cup chopped or dried cilantro
  • 2 limes, juiced
  • 2 tbsp extra virgin olive oil
  • Season to taste with garlic powder, sea salt, black peeper, and smoked paprika
  • Optional: Avocado

Instructions:

  1. Remove beans from can and rinse in strainer, add to an empty bowl
  2. Add tomatoes, onion, corn, bell peppers, and cilantro to bowl and mix with beans.
  3. Season, add lime juice, olive oil, and mix all ingredients
  4. Taste and add more seasoning, lime, or olive oil if needed
  5. Ejoy in romaine lettuce cups or in a bowl and top with avocado!
